Buffalo Bleu Cheese Salad

 

I love buffalo wings and bleu cheese dip, but they can be messy and unhealthy. I used similar ingredients to create a lighter salad that still has the buffalo bleu cheese flavor! 


Serves: 1 

Total time: 15 minutes 

Ingredients:

•2-3 large handfuls of Coleslaw Veggie Mix, without sauce (such as shredded cabbage, carrots, radishes, etc)

2-3 Green Onions 

•Cilantro, to taste 

•1 large Celery Stalk 

•1/4 cup Chicken Breast, shredded (optional) 

•Bleu Cheese 

•Ranch Dressing 

•Buffalo Sauce (such as Frank’s Hot)


If using chicken, shred and mix with 2 tablespoons of hot sauce and refrigerate to soak. This can be done several hours in advance and left to marinade. Chop green onions, celery, and cilantro. Place coleslaw mix on a large plate. Top with chopped green onions, celery, and cilantro. Add marinated chicken. Drizzle ranch dressing and buffalo sauce over the salad. Top with crumbled bleu cheese. Mix well, and serve immediately.
