Hello! I hope everyone is having a fun and safe Fourth of July/ Canada Day weekend! Everyone over at Darian’s Tastes and Travels is having a great time lighting off fireworks and eating lots of food! To celebrate the 4th, we would like to share this pretty red white and blue berry trifle! It’s delicious, healthy, and a great dessert for summer days like this. Total time: 10 minutes
* 2 cups of heavy whipping cream
* 3-5 tablespoons of confectioner’s sugar
* 2 teaspoons of vanilla extract
* Approximately a dozen large strawberries
* 1 container of blueberries
Make the whipped cream- In an electric mixer, whip the cream until soft peaks begin to form. Do this starting at the lowest setting and gradually increasing speed to prevent splattering. Once soft peaks have formed, slowly add the confectioner’s sugar, one tablespoon at a time. When you are satisfied with the consistency, add the vanilla quickly and stop the mixer to avoid over whisking.
Prepare the fruit- wash the berries, and slice the strawberries into long pieces, then in half again.
Assemble the trifle- In a clear glass container (such as a wine glass) layer the blueberries, strawberries, and whipped cream; starting with the blueberries. Finish the glass with a layer of whipped cream and garnish with a scalloped strawberry. Serve immediately.
