Asian Peanut Noodles 


I was so excited to have my all-time favorite pasta recipe for lunch (and dinner) today! It’s delicious, and this recipe makes at least enough for 8 people, so it’s great for potlucks and parties. It saves very well so it is perfect to take for lunch at work or school. I hope you guys enjoy this super easy pasta recipe as much as I do! **You will notice in this recipe that almost nothing has a set amount needed. This pasta is very much to your own taste. For an easy party idea, make the pasta with sauce and leave everything else off, cut up the veggies, cashews, and cilantro and have a pasta topping bar! 

Asian Peanut Noodles 

Serves 6-8 
* Spaghetti or angel hair noodles 

* Vegetables, of your choice. (I like to use shredded carrots and broccoli, but you could use anything! Think bean sprouts, mushrooms, cabbage, anything!)

* Cilantro 

* Red onions 

* Green onions 

* Peanut sauce, recipe follows **(see note below) 

* Roughly chopped cashews, to garnish 
Cook noodles according to package instructions. Cool for at least 10 minutes. Chop vegetables into bite sized pieces, and add to pasta. Add chopped cilantro and chopped green onions. Add in sauce (see note) and mix well. Serve cold with chopped cashews on top. 
**note: if you don’t want/can’t eat/etc the peanut sauce, I have substituted pre made teriyaki sauce, red pepper sauce, garlic sesame sauce, anything!! 
Peanut noodle sauce  
1 cup of chunky peanut butter

2 tablespoons of sesame oil 

3 tablespoons of soy sauce 

1 tablespoon of rice vinegar 

3-4 large cloves of garlic 

Sriracha, to taste 

Warm water 
Peel garlic and chop finely. Mix a few spoonfuls of warm water into peanut butter to make it easier to stir. Add all other ingredients. Taste, and adjust to your liking. Serve over cooled noodles.
